Vegan pumpkin pancakes
Here is a recipe to prepare healthy pancakes, which are different from the usual ones.

Ingredients for two people
- 100 grams of flour (I used spelt flour)
- 120 grams of unsweetened non-dairy milk (I suggest soy milk)
- 100 grams of pumpkin puree (4 tbsp)
- 1 tsp of baking soda
Preparation
First of all, we have to prepare the pumpkin puree. To do it you can cook a pumpkin in a convection oven at 200 °C for 45 minutes. You can use the rest of the pumpkin puree in other recipes, such as this oatmeal.
Combine all the ingredients in a bowl and mix.
Heat a non-stick pan and shape pancakes by using a spoon.
Cook on low heat with a lid and turn the pancakes after a few minutes (when there will be bubbles on their top).
Pumpkin pancakes can be kept in the fridge for two days.
To garnish them: you can use maple syrup or fruits.
