Vegan pumpkin oatmeal

Oatmeal is a nourishing breakfast. It is typical of the Anglo-Saxon culture. Here is an excellent autumnal version.

Ingredients for one person

- 25 grams of oat flakes

- 2 tbsp of pumpkin puree

- 180 grams of unsweetened non-dairy milk (I suggest oat milk)

- 1 tsp of cinnamon

- 1 tsp of a liquid sweetener, such as agave syrup, maple syrup (optional)

- A pinch of salt

Preparation

First of all, we have to prepare the pumpkin puree. To do it you can cook a pumpkin in a convection oven at 200 °C for 45 minutes.
You can use the rest of the pumpkin puree in other recipes, such as these pancakes.
Combine in a saucepan oat flakes, non-dairy milk, pumpkin puree, and cinnamon and cook on low heat for ten minutes.

Oatmeal can be kept in the fridge for two days.

To garnish it: you can use walnuts, raisins, and extra cinnamon.
