Vegan three Kings cake

Three Kings cake is the traditional cake popular in France for the Epiphany. It contains a “fève” hidden in the filling (formerly it was a fava bean, but nowadays it is a small ceramic figurine). The one who finds it becomes the king or the queen of the day.

Ingredients for six people

- 250 grams of almonds

- 50 grams of sunflower oil

- 50 grams of unsweetened non-dairy milk (I suggest soy milk)

- 70 grams of sugar

- 2 puff pastry rolls

- A pinch of salt

- 1 tbsp of rum

Preparation

Toast the almonds for 15 minutes in a convection oven at 180 °C. Let them cool and powder them in a food processor.
Mix the almonds in a bowl with sunflower oil, non-dairy milk, sugar, salt, and rum.
Unroll a puff pastry into a round baking pan. Spread the mix leaving the borders empty, hide in the filling the “fève” and cover with the second puff pastry roll. Brush the surface of the cake with sunflower oil. Cook for 30 minutes in a convection oven at 180 °C.
Three Kings cake is delicious when eaten warm or at room temperature.

It can be kept in the fridge for three days.
