Vegan pepparkakor
Pepparkakor are Swedish biscuits typical of the Christmas tradition.

Ingredients for 40 biscuits
- 300 grams of flour
- 50 grams of sugar
- 200 grams of unsweetened non-dairy milk (I suggest oat milk)
- 90 grams of sunflower oil
- 2 tbsp of cinnamon
- 1 tbsp of powdered ginger
- 1 tbsp of baking soda
- A pinch of salt
Preparation
In a bowl pour flour, sugar, cinnamon, ginger, baking soda, and salt. Mix and add the liquid ingredients: milk and oil.
Knead until you form a smooth dough and roll it out.
Shape biscuits and bake them in a convection oven for 10 minutes at 180 °C.
Pepparkakor can be stored in the fridge for three days.
