Vegan Lussekatter
Lussekatter are Swedish desserts that are usually prepared to celebrate Saint Lucia.

Ingredients for 12 lussekatter
- 300 grams of flour
- 100 grams of unsweetened non-dairy milk (I suggest oat milk)
- 60 grams of sunflower oil
- 60 grams of sugar
- 2 tbsp of raisins
- 8 grams of yeast powder
- 1 tsp of saffron
Preparation
First of all, dissolve the saffron and the yeast in the plant-based milk.
In a bowl, pour flour, sugar, oil and add milk.
Knead the dough and form biscuits shaped as S.
Add the raisins at the extremities of each biscuit.
Bake in a convection oven for 10 minutes at 180 °C.
Lussekatter can be stored in the fridge for three days.
