Vegan lamingtons
A lamington is an Australian cake. It is made from squares of sponge cake coated in a layer of chocolate sauce and rolled in desiccated coconut.

Ingredients for about 10 lamingtons
- 150 grams of flour
- 2 tsp of baking powder
- 75 grams of sugar
- 200 grams of unsweetened non-dairy milk (I suggest oat milk)
- 60 grams of sunflower oil
- ½ tbsp of apple cider vinegar
- A pinch of salt
- 150 grams of dark chocolate
- 100 grams of raspberry jam
- 75 grams of desiccated coconut
Preparation
In a bowl, pour flour, baking powder, sugar, non-dairy milk, oil, vinegar, and salt, and mix well.
Place the batter in a square baking tin.
Cook in a convection oven for 20 minutes at 180 °C.
When the cake is ready, let it cool down and then put it in the freezer for an hour.
In the meantime, melt the chocolate in a bain marie.
Slice the cake into eight pieces and cut every slice in half.
Spread the raspberry jam on one half and shape it again into squares.
After this time, cover with melted chocolate, then roll each lamington into desiccated coconut.
Place the lamingtons again in the freezer for one hour and enjoy.
Lamingtons can be stored in the fridge for four days.
