Vegan kiwi pancakes

Ingredients for two people
- 100 grams of flour (I used spelt flour)
- 120 grams of unsweetened non-dairy milk (I suggest oat milk)
- 150 grams of kiwis (about 2)
- 1 teaspoon baking soda
Preparation
Blend the kiwis and combine them in a bowl with the flour, non-dairy milk and baking soda. Stir well.
Heat a non-stick pan and shape pancakes with the use of a spoon.
Cook over a low flame, covering with a lid, and after a few minutes (when bubbles start to form on the surface of the pancakes) turn them over.
Kiwi pancakes can be stored in the fridge for two days.
To garnish: serve with maple or agave syrup.
