Vegan caprese cake
Caprese cake is a dessert typical of Neapolitan cuisine, in particular of the island of Capri.

Ingredients for six people
- 160 grams of flour (I used whole wheat flour)
- 100 grams of almond flour
- 16 grams of baking powder
- 30 grams of unsweetened cocoa powder
- 100 grams of dark chocolate
- 100 grams of sugar
- 300 grams of unsweetened non-dairy milk (I suggest oat milk)
- 50 grams of sunflower oil
- A pinch of salt
Preparation
In a bowl, combine all the following ingredients: flour, almond flour, baking powder, cocoa powder, sugar, non-dairy milk, sunflower oil, and salt. Melt the chocolate in bain-marie. Let it cool and add it to the other ingredients.
Transfer the mixture to a baking tray.
Cook for 35 minutes in a static oven at 180 °C.
Decorate with powdered sugar.
Vegan caprese cake can be kept in the fridge for three days.
