Vegan bûche de Noël
Bûche de Noel is a French Christmas cake shaped like a log. This cake represents all the Christmases I spent with my French family and it is linked to memories from my childhood. Here is the recipe to prepare the traditional bûche de Noël (or yule log), but vegan!

Ingredients for eight people
- 180 grams of flour
- 100 grams of margarine
- 200 grams of unsweetened non-dairy milk (I used oat milk)
- 2 tbsp of cornstarch
- 10 grams of baking powder
- 3 tbsp of sugar
- 4 tbsp of liquor of choice
- A pinch of salt
For the ganache:
- 300 grams of dark chocolate
- 250 grams of margarine
- 2 tbsp of unsweetened cocoa powder
Preparation
In a big bowl, combine flour, melted margarine, non-dairy milk, cornstarch, baking powder, sugar, and salt. Pour the batter on a baking pan covered with baking paper. Use your spatula to smooth out the batter and create an even layer.
Cook for 8-10 minutes in a convection oven at 200 °C. Prepare a kitchen towel by wetting it and rinsing it. When the cake is ready, put the wet towel on it.
Meanwhile, prepare the ganache. In a small saucepan, add chocolate and margarine. Cook on low heat for 5 minutes mixing frequently, until both chocolate and margarine are melted. Take off the flame and let it cool down until it hardens a little. Then, add cocoa powder and whisk vigorously.
Flip the cake onto the towel and gently peel the parchment paper off. Sprinkle the liquor you chose all over the surface of the log.
Use a spatula to spread a part of the ganache all over the surface of the cake, leaving a small border around the edges.
Gently roll the cake helping you with the wet towel. Wrap the cake with cling film and put it in the fridge for at least 2 hours.
After this time, slice off the edges of the bûche. Use a spatula to smooth the other part of the ganache all over the cake. Take a fork and run it down the length of the cake several times to make it look like a log.
Decorate with Christmas objects!
Vegan bûche de Noël can be kept in the fridge for three days (if you resist the temptation!).
