Vegan anzac cookies

Anzac cookies are Australian biscuits made of coconut and oat flakes. Their name derives from the Australian and New Zealand Army Corps (ANZAC), since they were sent to the Australian and New Zealander soldiers.

Ingredients for 20 cookies

- 100 grams of oat flakes

- 100 grams of flour

- 80 grams of desiccated coconut

- 50 grams of sugar

- 80 grams of margarine

- 8 tbsp of unsweetened non-dairy milk (I suggest oat milk)

- 1 tbsp of maple syrup

- ½ tsp of baking soda

- A pinch of salt

Preparation

First of all, melt the margarine in the microwave.
In a bowl, combine oat flakes, flour, desiccated coconut, sugar, melted margarine, non-dairy milk, maple syrup, baking soda, and salt.
Shape the dough into cookies and bake in a convection oven for 20 minutes at 180 °C.

Anzac cookies can be stored in the fridge for three days.
