Sweet vegan crêpes
According to the French tradition, Candlemas has to be celebrated by eating crêpes. Their shape and their color symbolize the sun and the end of the winter.

Ingredients for two people
- 150 grams of flour
- 300 grams of unsweetened non-dairy milk (I suggest oat milk)
- 40 grams of sugar
- 1 tbsp of rum
- Sunflower oil as needed
Preparation
Combine into a bowl flour, non-dairy milk, and sugar. Mix and let it rest for at least one hour. Add the rum and heat a non-stick pan. Oil the pan with sunflower oil and pour about one ladle of the mix. Cook one minute for each side.
Serve the crêpes when hot with spreadable cream, nut butter (you can prepare your peanut butter), seeds, and fruits.
The crêpes mix can be kept in the fridge for two days.
To garnish: I used raspberry jam and chia seeds.
