Coconut energy balls
Coconut energy balls are great for a post-workout bite or an afternoon snack. This recipe is very simple and nutritious.

Ingredients for 10 balls
- 70 grams of unsweetened non-dairy yogurt (I suggest soy yogurt)
- 2 tbsp of oat flakes
- 1 tsp of a liquid sweetener such as agave syrup or maple syrup
- 70 grams of shredded coconut
Preparation
In a bowl, combine non-dairy yogurt, oat flakes, sweetener, and shredded coconut (set aside about 2 tbsp of shredded coconut for later). Mix well and store in the fridge for at least an hour.
After this time, shape the mix into balls and roll them in shredded coconut.
Coconut energy balls can be kept in the fridge for three days.
