Vegan vitello tonnato
Vitello tonnato is a well-known starter in Italy. I prepared its vegan version. Honestly, I was happily surprised by the result, because it recreates the flavor of the traditional starter, but of course without harming any animal.

Ingredients for four people
- 250 grams of seitan
For the sauce:
- 240 grams of cooked chickpeas
- 3 tbsp of plant-based mayonnaise
- 6 tbsp of lemon juice
- 3 tbsp of capers
Preparation
First of all, cut the seitan into slices. Warm them into a saucepan. In the meantime, prepare the sauce. In a food processor combine chickpeas, mayonnaise, lemon juice, and capers. Blend everything for 30 seconds.
Let the seitan slices cool down, then serve them with the sauce.
Vegan vitello tonnato can be kept in the fridge for three days.
