Ingredients for four people
- 500 grams of potatoes (about 3)
- 250 grams of green beans
For the pesto:
- 80 grams of basil leaves
- 6 tbsp of olive oil
- 5 tbsp of nutritional yeast
- 1 tsp of powdered garlic
- 15 grams of pine nuts
- A pinch of pepper
- 1 tsp of salt
Preparation
Steam the potatoes and the green beans. Meanwhile, prepare the pesto. Blend in a food processor basil leaves, olive oil, nutritional yeast, garlic, pine nuts, pepper, and salt. Dice the potatoes and the green beans and add the pesto. Serve cold.
Potatoes, green beans and plant-based pesto can be kept in the fridge for three days.
