Wild pea soup

The wild pea is an ancient legume that is now quite unknown. In Italy, it is only cultivated in a few places in the south of the country.

Ingredients for two people

- 250 grams of wild peas

- 100 grams of celery (about ΒΌ)

- 250 grams of potatoes (about 2)

- 100 grams of onion (about 1)

- 100 grams of carrots (about 2)

- Salt and olive oil as needed

- 2 leaves of sage

- Water as needed

Preparation

Put the wild peas to soak for about 12 hours.
Cut finely the vegetables.
Fry chopped celery, onion, carrots with olive oil. When the onion is browned, add water, potatoes, and wild peas. Salt the water.
Let it cook on a low flame for at least half an hour, check it regularly.
Serve it hot and garnish it with sage leaves.

This wild pea soup can be kept in the fridge for three days, or it can be frozen.

You can flavor your soup with vegan parmesan.
