Vegan yaki udon

Yaki udon is a pasta dish typical of Japanese cuisine. Here is my favorite recipe to prepare this pasta shape!

Ingredients for two people

- 180 grams of udon

- 100 grams of onion (about 1)

- 180 grams of carrots (about 2)

- 180 grams of zucchini (about 2)

- 8 tbsp of soy sauce

- 2 tbsp of sesame oil

- 2 tbsp of maple syrup

- 1 tbsp of peanut butter

- 1 tsp of powdered ginger

- 1 tbsp of salt

- 2 tbsp of sesame seeds

Preparation

First of all, cook the udon by following the instructions on the packaging.
In the meantime, slice the vegetables and cook them in a pan with sesame oil and salt.
In a small saucepan pour soy sauce, maple syrup, peanut butter, and ginger. Cook for a few minutes and set aside.
When the pasta is ready, pour it in the pan with the vegetables. Add the previously prepared sauce and stir well to amalgamate all the ingredients.
Serve the udon and decorate with sesame seeds.

Vegan yaki udon can be stored in the fridge for two days.
