Vegan Tunisian couscous

Couscous is a cereal very popular in many countries of the Middle East. Here is one of my favorite recipes to prepare it!

Ingredients for four people

- 200 grams of couscous

- 150 grams of carrots (about 2)

- 150 grams of zucchini (about 2)

- 120 grams of cooked chickpeas

- 75 grams of raisin

- The juice of half a lemon

- 2 tbsp of olive oil

- 1 tbsp of salt

- 1 tbsp of parsley

- 1 tbsp of mint

Preparation

First of all, slice the vegetables and boil them.
In the meantime, cook the couscous with the absorption method.
At this point, in a bowl pour couscous, vegetables, chickpeas, raisin, lemon juice, olive oil, and salt. Mix well.
Serve the couscous cold and decorate it with parsley and mint.

Tunisian couscous can be stored in the fridge for three days.
