Vegan tortilla de patatas

Ingredients for two people
- 300 grams of potatoes (about 2)
- 100 grams of onion (about 1)
- 100 grams of chickpea flour
- 150 grams of water
- 2 tbsp of olive oil
- 2 tsp of salt
- A pinch of black pepper
Preparation
Cut in thin slices the onion and the potatoes. Cook them in a pan with olive oil.
In a bowl, combine chickpea flour, water, salt, pepper, and cooked vegetables.
Mix and pour the mixture into a pan, and cover with a lid.
Turn the tortilla de patatas after around 8 minutes and cook the other side.
Turn off the heat when the tortilla has browned on both sides.
Tortilla de patatas can be stored in the fridge for three days.
