Vegan stuffed peppers

Ingredients for four people
- 450 grams of peppers (about 2)
- 100 grams of rice
- 240 grams of cooked lentils
- 300 grams of cherry tomatoes (about 10)
- 2 tbsp of salt
- A pinch of pepper
- 3 tbsp of nutritional yeast (or vegan parmesan)
- 20 grams of olives
- 20 grams of dried tomatoes
Preparation
First of all, cut the peppers in half and cook them for 25 minutes in a convection oven at 180 °C. In the meantime, cook the rice and cut the cherry tomatoes, the olives, and the dried tomatoes. In a bowl, combine the following ingredients: rice, lentils, cherry tomatoes, salt, pepper, nutritional yeast (or parmesan), olives, dried tomatoes. Place the mix in the peppers and sprinkle everything with nutritional yeast. Cook for 15 minutes in a convection oven at 180 °C.
Vegan stuffed peppers can be kept in the fridge for three days.
