Vegan spanakopita

Ingredients for six people
- 2 rolls of puff pastry
- 350 grams of cooked spinach
- 200 grams of vegan feta
- 1 tsp of salt
- A pinch of black pepper
Preparation
Start by cooking the spinach in a pan or steaming it, then place it in a bowl with the crumbled feta, salt and pepper and mix well.
Cover a baking dish with a sheet of puff pastry. Pour the spinach and feta filling over the pastry sheet and close it with another roll of puff pastry.
Bake for 35 minutes in a static oven at 175 °C.
The vegan spanakopita can be stored in the fridge for three days.
