Vegan salami with lentils
My grandmother often cooked this dish and it was one of my favorites. Here is a revised version of it with a vegan twist!

Ingredients for six people
- 2 vegan salamis (about 400 grams)
- 300 grams of lentils
- 100 grams of white onion (about 1)
- 2 tablespoons of olive oil
- 1 clove of garlic
- 1 bay leaf
- 1 tsp salt
- ½ tsp pepper
Preparation
First, peel the onion and put it in a medium-sized pot with boiling water. Add the lentils, garlic, bay leaf, salt and pepper. Cook on a low flame for half an hour.
Next, add the salami to the pot and let it cook for an hour so that everything has tasted properly.
Serve hot with a drizzle of oil.
The vegan salami with lentils can be stored in the fridge for four days.
