Vegan risi e bisi
Risi e bisi is a dish typical of the culinary tradition of Italy’s region Veneto. The main ingredients of this recipe are rice and peas.

Ingredients for two people
- 150 grams of rice
- 180 grams of onions (about 2)
- 270 grams of cooked peas
- 1 vegetable stock (you can make your own with this recipe)
- 1 tbsp of margarine
- 1 tbsp of salt
- 1 tsp of pepper
- Water as needed (for the broth)
Preparation
First of all, prepare the broth in a pot, by melting the stock in about 1 liter of hot water.
Cook the onions in a pan with olive oil and, after a few minutes, add the rice and let it cook for a minute.
Keep cooking the rice by gradually adding the broth and mixing.
In the meantime, mix in a food processor half of the peas.
When the rice is almost ready, add all the peas (mixed and whole), salt, pepper, the margarine and mix well.
Serve warm with a sprinkle of pepper.
Risi e bisi can be stored in the fridge for two days.
You can give more taste to your dish with vegan parmesan.
