Vegan raggmunk

Raggmunk are savory potato pancakes typical of Swedish cuisine. They are traditionally served with lingonberry jam.

Ingredients for 10 raggmunk

- 500 grams of potatoes (about 5)

- 200 grams of unsweetened non-dairy milk (I suggest oat milk)

- 150 grams of flour

- 1 tsp of salt

- 1 tbsp of margarine

- 4 tbsp of lingonberry jam

Preparation

First of all, shred the potatoes. Combine them with flour, non-dairy milk, and salt.
Mix until you obtain an homogeneous consistency.
Heat a non-stick pan, grease it with margarine, and shape pancakes by using a spoon.
Cook on low heat with a lid and flip the raggmunk after a few minutes.
Serve the raggmunk while they are warm and decorate them with lingonberry jam.

Raggmunk can be stored in the fridge for three days.
