Vegan quesadilla
A quesadilla is a Mexican tortilla filled with cheese. Here is the recipe to prepare this dish, but vegan!

Ingredients for 4 quesadillas
- 2 tortillas
- 250 grams of unsweetened non-dairy yogurt (I suggest soy yogurt)
- 8 tbsp of nutritional yeast
- 2 tbsp of olive oil
- 1 tsp of salt
- A pinch of black pepper
- A pinch of chili pepper
Preparation
First of all, prepare the cheese sauce. Pour in a bowl plant-based yogurt, nutritional yeast, oil, salt, pepper, and chili pepper and mix.
Fill the tortillas with cheese sauce and cook them in a pan for about two minutes on each side.
Cut each tortilla in half and serve.
Quesadilla can be stored in the fridge for a day.
