Vegan polenta concia

“Polenta concia” is a dish typical of the culinary tradition of northern Italy, especially of the region Valle d’Aosta. It is prepared by using cornflour and adding to it cheese (in this case, vegan cheese).

Ingredients for two people

- 250 grams of cornflour

- 1 liter of water

- 250 grams of vegan cheese (you can use almond ricotta)

- 2 tbsp of nutritional yeast

- 2 tbsp of olive oil

- 2 tbsp of salt

- 1 tsp of pepper

Preparation

First of all, cook polenta following the instructions written on the packaging.
Mix frequently and add olive oil.
When missing 5 minutes at the end of cooking time, add plant-based cheese and pepper.
Mix well and serve this dish warm, adding pepper and olive oil or margarine.

“Polenta concia” can be stored in the fridge for two days.
