Vegan paella
Paella is a traditional dish of Spanish cuisine made of rice. This dish is delicious and very colorful.

Ingredients for four people
- 300 grams of rice
- 200 grams of onion (about 1 ½)
- 250 grams of eggplant (about 1)
- 200 grams of carrots (about 2)
- 300 grams of tomatoes (about 2)
- 200 grams of bell pepper (about 1)
- 1 vegetable stock (you can make your own with this recipe)
- 2 tbsp of saffron
- 4 tbsp of olive oil
- 2 tbsp of salt
- 1 tsp of black pepper
- Water as needed (for the broth)
Preparation
First of all, dice all the vegetables and cook them in a pan with olive oil.
In the meantime, prepare the broth by dissolving the stock in the water.
When the vegetables are ready, add the rice to the pan and toast it for a few minutes.
Keep on cooking the rice by gradually adding the broth and mixing.
Add salt, pepper, and saffron, and keep on mixing.
When the rice is ready, serve warm.
Paella can be stored in the fridge for two days.
