Vegan kafteji
Kafteji is a Tunisian specialty made of vegetables. This dish is very tasty and colorful.

Ingredients for four people
- 300 grams of potatoes (about 3)
- 550 grams of zucchini (about 5)
- 400 grams of bell peppers (about 2)
- 450 grams of cherry tomatoes (about 15)
- 4 tbsp of sunflower oil
- 1 tsp of salt
- 1 tsp of powdered garlic
- ½ tsp of chili pepper
- 2 tsp of coriander seeds
- 2 tsp of cumin seeds
- 2 tsp of parsley
Preparation
Slice all the vegetables.
Pour the oil into a pan and cook the potatoes. When they are ready, place them into a big bowl and cook zucchini.
When the zucchini are also cooked, put them into the bowl with the potatoes.
Keep on cooking the bell peppers and place them in the same bowl as the other vegetables.
In conclusion, cook the cherry tomatoes in the pan until they become a sauce.
Pour the tomatoes into the bowl with salt, garlic, chili pepper, coriander seeds, and cumin seeds.
Mince the mixture in the bowl using two knives and do a cross movement.
Sprinkle with parsley and serve.
Kafteji is usually eaten at room temperature during wintertime and cold during summertime.
Kafteji can be stored in the fridge for three days.
