Vegan jacket potato
The jacket potato is a filled potato typical of Anglo-Saxon cuisine. I decided to prepare a vegan version of this famous dish.

Ingredients for four people
- 480 grams of potatoes (about 4)
- 240 grams of cooked beans
- 400 grams of tomato pulp
- 100 grams of onion (about 1)
- 400 grams of bell peppers (about 2)
- 6 tbsp of olive oil
- 2 tsp of salt
- 1 tsp of black pepper
- 1 tsp of chili pepper
- 8 tbsp of nutritional yeast (or vegan parmesan)
Preparation
Wash the potatoes and season them with olive oil and salt. Cook for 30 minutes in a static oven at 180 °C.
In the meantime, slice the onion and the bell peppers and cook them in a pan. After 20 minutes, add tomato pulp, black pepper, chili pepper, and beans. Let everything cook for 10 more minutes. Remove the potatoes from the oven and let them cool, then cut them in half and salt them. Fill the potatoes with the bell pepper, tomato pulp, and beans mix. Sprinkle the potatoes with nutritional yeast (or with parmesan).
Cook for 10 minutes in a static oven at 180 °C.
Jacket potatoes can be stored in the fridge for three days.
