Vegan green bean omelet
The vegan omelet is a quick, healthy, and light alternative to the traditional omelet. In this version, I added green beans for a summer result.

Ingredients for two people
- 100 grams of chickpea flour
- 200 grams of water
- 200 grams of cooked green beans
- 1 tsp of salt
- 1 tbsp of olive oil
- A pinch of pepper
Preparation
Steam the green beans and cut them into small pieces. In a bowl, combine chickpea flour, water, salt, pepper, and cooked green beans. Pour the mixture into a pan and cover with a lid. Turn the omelet after 7 minutes and cook the other side. Turn off the heat when the omelet has browned on both sides.
This vegan green bean omelet can be kept in the fridge for three days.
