Vegan carrot omelet
The vegan omelet is a quick, healthy, and light alternative to the traditional omelet. In this version, I added carrots for a delicious result.

Ingredients for two people
- 100 grams of chickpea flour
- 200 grams of water
- 200 grams of carrots (about 2)
- 1 tsp of salt
- 1 tbsp of olive oil
- A pinch of salt
Preparation
Cut in small pieces the carrots and cook them in a pan with olive oil. In a bowl, combine chickpea flour, water, salt, pepper, and cooked carrots. Pour the mixture into the pan where you cooked the carrots and cover with a lid. Turn the omelet after 7 minutes and cook the other side. Turn off the heat when the omelet has browned on both sides.
This vegan carrot omelet can be kept in the fridge for three days.
