Vegan cacio e pepe

Ingredients for two people

- 300 grams of pasta (it is better to use long pasta such as spaghetti and linguine)

- 125 grams of unsweetened non-dairy yogurt (I suggest soy yogurt)

- 8 tbsp of nutritional yeast (or vegan parmesan)

- 1 tsp of salt

- 5 tsp of pepper

Preparation

Cook the pasta in salty water. In the meantime, prepare the sauce by combining in a bowl non-dairy yogurt, nutritional yeast (or parmesan), salt, and pepper. Cook the sauce in a pan for a few minutes, then add the pasta and a few tablespoons of the cooking water.
Serve and sprinkle with pepper.

Cacio e pepe can be kept in the fridge for two days.
