Ingredients for four people
- 8 small tortillas (you can prepare them at home with this recipe)
- 100 grams of rice
- 600 grams of avocados (about 2)
- 700 grams of tomato sauce
- 1 tsp of chili pepper
- 60 grams of onion (about ½)
- 200 grams of dried black beans
- 1 tsp of salt
- 1 tsp of pepper
- 2 tbsp of olive oil
- 1 tbsp of lemon juice
Preparation
First of all, let the black beans soak for 6 hours. Cook the beans and meanwhile cook the rice too. Cut the onion and sauté it in a pan with olive oil. To the pan, add cooked beans, chili pepper, and tomato sauce. Let cook on low heat for twenty minutes.
Dice the avocados and put them in a bowl with salt, pepper, and lemon juice. Mix well and leave it aside.
Take a tortilla and fill it with rice, avocado, and beans with tomato sauce. Fold the sides of the tortilla and cook it for a few minutes in a pan.
This vegan burrito can be kept in the fridge for two days.
