Vegan buckwheat galette bretonne

Ingredients for two people
- 150 grams of buckwheat flour
- 300 grams of water
- 1 tsp salt
- ½ tbsp sunflower seed oil
For filling:
- 100 grams zucchini (about 1)
- 50 grams of onion (about ½)
- 1 tbsp of olive oil
Preparation
Combine the flour, water and salt in a bowl. Mix and let the dough rest for at least one hour.
Meanwhile, slice the onion and zucchini. Cook them in a pan with olive oil.
After the resting time has elapsed, heat a nonstick skillet and grease it with seed oil.
Pour in about a ladleful of the batter and cook for about one minute on each side.
Serve the galettes bretonnes hot along with the cooked zucchini.
The buckwheat galette dough can be stored in the fridge for two days.
