Vegan bean and vegetable curry

Ingredients for two people
- 240 grams of cooked beans
- 400 milliliters of coconut milk
- 160 grams of rice
- 90 grams of onion (about 1)
- 50 grams of carrots (about ½)
- 60 grams of green beans (about 20)
- 50 grams of bell peppers (about ¼)
- 1 tbsp of olive oil
- 1 tsp of curry
- 1 tsp of turmeric
- 1 tsp of ras el hanout
- 1 tsp of salt
Preparation
First of all, cook the rice.
In the meantime, slice the vegetables and fry them in a pot with olive oil, curry, turmeric, and ras el hanout. When the vegetables are ready, add beans, salt, and pour coconut milk.
Mix and let cook for 20 minutes.
When the curry has thickened, serve it with rice.
Bean and vegetable curry can be stored in the fridge for two days.
