Vegan amatriciana

Amatriciana is a typical pasta from Latium, one of my favorites. Here's how I prepare it in a vegan version!

Ingredients for four people

- 300 grams of pasta

- 100 grams of smoked tofu

- 200 grams of tomato sauce

- 2 tbsp of olive oil

- 1 tsp salt

- ½ tsp black pepper

- ½ tsp of chili pepper

Preparation

First, cut the smoked tofu into cubes, pour the oil into a frying pan and cook it.
After a few minutes, add tomato sauce, salt, pepper and chili pepper to the pan and cook on a low flame.
Meanwhile, cook the pasta, leaving it “al dente”.
Add the pasta to the skillet along with a few tablespoons of cooking water. Cook for a few minutes, serve and sprinkle with pepper.

Amatriciana will keep in the fridge for two days.
