Vegan affunnatielle

Affunnatielle is a dish typical of the culinary tradition of Italy’s region Molise. It is very tasty and colorful. The traditional recipe is prepared with ingredients of animal origin, here is how you can make it in a vegan way!

Ingredients for two people

- 200 grams of chickpea flour

- 150 grams of unsweetened non-dairy milk (I suggest soy milk)

- 400 grams of bell peppers (about 2)

- 200 grams of tomatoes (about 2)

- 100 grams of onion (about 1)

- 20 grams of basil leaves

- 3 tbsp of olive oil

- 1 tbsp of salt

- 1 tsp of pepper

- A pinch of chili pepper

Preparation

First of all, mix the chickpea flour with the non-dairy milk until you obtain a smooth mixture. Let it rest.
Meanwhile, mince the onion and sauté it with olive oil in a pan. After a few minutes, add to the pan diced bell peppers. Let cook for about ten minutes.
Dice the tomatoes and add them to the pan along with basil, salt, pepper, and chili pepper.
After ten minutes, pour the chickpea mixture into the pan with the vegetables and mix energetically until you obtain a consistency similar to scrambled egg.
Decorate with some basil leaves and serve warm.

Affunnatielle can be kept in the fridge for two days.
