Trofie with plant-based pesto is a pasta dish typical of Italy’s region Liguria. It is also well-known in the rest of the country. Here is the recipe for a tasty and colorful meal.

Ingredients for four people
- 300 grams of pasta (if you can't find trofie, you can use short pasta instead)
For the pesto:
- 80 grams of basil leaves
- 6 tbsp of olive oil
- 5 tbsp of nutritional yeast (or vegan parmesan)
- 1 tsp of powdered garlic
- 15 grams of pine nuts
- A pinch of pepper
- 1 tsp of salt
Preparation
First of all, prepare the pesto. Blend in a food processor basil leaves, olive oil, nutritional yeast (or parmesan), garlic, pine nuts, pepper, and salt.
In the meantime, cook the pasta. When it is “al dente”, combine it with the pesto.
Trofie with plant-based pesto can be kept in the fridge for two days.
