Ingredients for four people
- 240 grams of rice
- 1 tsp of turmeric
- 250 grams of carrots (about 3)
- 200 grams of pepper (about 1)
- 60 grams of raisins
- 40 grams of pistachios
- 1 tsp of sesame seeds
- 1 tsp of poppy seeds
- 4 tbsp of olive oil
- 2 tbsp of salt
Preparation
Dice the pepper and cook it in a pan or in the oven. In the meantime, cook the rice. In the last 5 minutes of the cooking time, add to the pot turmeric and diced carrots. Let the rice cool down and add pepper, raisins, sesame seeds, poppy seeds, olive oil, salt, and chopped pistachios.
Summer rice salad can be kept in the fridge for two days.
