Pasta with vegan sundried tomato and almond pesto
I love this sun-dried tomato and almond pesto, a great sauce for a quick and delicious pasta.

Ingredients for four people
- 300 grams of pasta (I used trofie pasta)
For the pesto:
- 100 grams dried tomatoes
- 4 tbsp of olive oil
- 5 tbsp nutritional yeast (or vegan parmesan)
- 1 tsp garlic powder
- 20 grams of almonds
- A pinch of pepper
Preparation
First, cook the pasta.
Meanwhile, prepare the pesto. Blend the sun-dried tomatoes, oil, nutritional yeast (or parmesan), garlic, almonds, and pepper in a blender.
When the pasta is al dente, drain it, and serve, topping it with pesto.
Pasta with sun-dried tomato and almond pesto can be stored in the fridge for two days.
