Mujaddara
Mujaddara is a dish typical of the Middle East. The dish is made up of lentils, rice, and onions. It is topped with a spicy yogurt sauce.

Ingredients for four people
- 300 grams of onion (about 3)
- 200 grams of dried lentils
- 250 grams of rice
- 4 tsp of cumin
- 4 tsp of coriander
- 1 tbsp of pepper
- 2 tbsp of salt
For the sauce:
- 125 grams of unsweetened non-dairy yogurt (I suggest soy yogurt)
- 1 tbsp of olive oil
- 1 tsp of salt
- 2 tsp of pepper
- 3 tsp of cumin
- 3 tsp of coriander
Preparation
Finely cut the onions and cook them in a pan with olive oil. In the meantime, cook the lentils and the rice in salty water (pay attention to the different cooking times). Drain the rice and the lentils and add them to the pan with the cooked onions. Add coriander, cumin, pepper, and salt, and let it cook for a few minutes.
Prepare the sauce combining in a bowl non-dairy yogurt, olive oil, salt, pepper, cumin, and coriander.
Serve the mujaddara hot topped with the mild sauce.
Mujaddara can be kept in the fridge for two days.
