Jota
Jota is a soup typical of Italy’s region Friuli Venezia Giulia, especially of the city Trieste. This delicious dish is simple and prepared with a few ingredients: sauerkraut, beans, and potatoes.

Ingredients for four people
- 385 grams of sauerkraut
- 250 grams of potatoes (about 2)
- 120 grams of cooked borlotti beans
- 1 clove of garlic
- 2 tbsp of olive oil
- 1 tbsp of salt
- 1 tsp of pepper
- 1 tsp of cumin
Preparation
Peel the garlic and sauté it in a large saucepan with olive oil. Then, add drained sauerkraut, salt, pepper, cumin, and cover with water. Cook on low heat.
In the meantime, dice the potatoes and add them to the saucepan.
After about thirty minutes, add the borlotti beans and let cook for a couple of minutes.
Serve warm and season the dish with pepper.
Jota can be kept in the fridge for three days.
