Fasolada
Fasolada is a Greek soup made from beans and vegetables; it is also called "the national food of the Greeks".

Ingredients for four people
- 350 grams of cooked cannellini beans
- 100 grams of onion (about 1)
- 100 grams of carrots (about 1)
- 100 grams of celery (about ⅛)
- 1 clove of garlic
- 2 tbsp of tomato paste
- 1 vegetable stock
- 2 tbsp of olive oil
- 1 tsp of salt
- ½ tsp of black pepper
- ½ tsp of paprika
- ½ tsp of chili pepper
- 1 tsp of oregano
Preparation
First, prepare the broth by dissolving the stock cube in the water.
Next, chop the onion, carrot and celery. Pour oil into a pot with crushed garlic and cook the vegetables.
After a few minutes, add the beans to the pot with the vegetables. Season with salt, pepper, paprika, chili and oregano and cover with the broth.
Leave to cook on a low flame for at least half an hour.
The fasolada can be stored in the fridge for three days.
