Ingredients for two people
- 250 grams of eggplant (about 1)
- 100 grams of onion (about 1)
- 150 grams of tomato (about 1)
- 2 cloves of garlic
- 2 tbsp of olive oil
- 1 tsp of salt
- A pinch of pepper
- 1 tsp of cumin seeds
- 1 tsp of coriander seeds
- 1 tsp of garam masala
- ½ tsp of chili pepper
Preparation
First of all, cook the eggplant, the tomato, and the cloves of garlic in a convection oven for 15 minutes at 200 °C.
Slice the onion and cook it in a saucepan with olive oil.
Remove the skin from the cooked vegetables and add them to the pan, with salt, pepper, cumin seeds, coriander seeds, garam masala, and chili pepper.
Let cook on low heat for 10 minutes.
Baingan bharta can be stored in the fridge for two days.
