Vegan banana pancakes
Banana pancakes are a variation of classic pancakes, fluffy and delicious.

Ingredients for two people
- 100 grams of flour (I used spelt flour)
- 120 grams of unsweetened non-dairy milk (I suggest oat milk)
- 150 grams of banana (about 1)
- 1 tsp of baking soda
Preparation
Smash the banana in a bowl and add flour, non-dairy milk and baking soda. Stir well.
Heat a non-stick pan and shape pancakes with the use of a spoon.
Cook over a low flame, covering with a lid, and after a few minutes (when bubbles start to form on their surface) turn them over.
Banana pancakes can be stored in the fridge for two days.
To garnish: serve with maple syrup.
