Vegan croque monsieur
Croque monsieur is French toast stuffed with ham, cheese and béchamel. Here is the 100% vegan version!

Ingredients for two people
- 8 slices of bread
- 4 slices of vegetable ham
- 50 grams of vegetable cheese
For the béchamel sauce:
- 40 grams of flour
- 40 grams of olive oil
- 500 grams unsweetened vegetable milk (I recommend oat milk)
- 1 tsp salt
- A pinch of pepper
- A pinch of nutmeg
Preparation
First, prepare the béchamel sauce in a saucepan. Combine the oil and flour and cook for one minute over low heat. Add the vegetable milk, salt, pepper and nutmeg and stir frequently for about 10 minutes.
Next, take the bread slices, spread the béchamel sauce on top, add the cheese and ham and close the croque monsieurs.
Pour the remaining béchamel sauce over the toasts.
Bake in a ventilated oven for 10 minutes at 190 °C.
The croque monsieur will keep in the refrigerator for three days.
