Ingredients for four people
- 300 grams of pasta (it is better to use long pasta such as spaghetti and linguine)
- 500 grams of spinaches
- 350 grams of almond ricotta
- 2 tbsp of olive oil
- 1 tbsp of salt
- A pinch of pepper
- A pinch of nutmeg
- 1 tsp of powdered garlic
Preparation
Steam the spinaches and let them cool down. Blend in a food processor spinaches, almond ricotta, olive oil, salt, pepper, nutmeg, and garlic. In the meantime, cook the pasta.
Combine the pasta and the cream into a pan and let cook for two minutes.
Spinach and almond ricotta pasta can be kept in the fridge for two days.
You can flavor your pasta with vegan parmesan.
