Patate ‘mpacchiuse
Patate ‘mpacchiuse are a side dish typical of Italy’s region Calabria. Their name “‘mpacchiuse” derives from the fact that, once they’re cooked, the potatoes will result stuck together.

Ingredients for four people
- 550 grams of potatoes (about 3)
- 100 grams of red onion (about 1)
- 4 tbsp of olive oil
- 2 tbsp of salt
- A pinch of pepper
Preparation
Thinly slice the potatoes. Pour the olive oil in a non-stick pan and place the potatoes covering the whole surface of the pan. Salt the potatoes with a tablespoon of salt. Cook on low heat with a lid for 10 minutes without stirring.
Meanwhile, thinly slice the onion. Add it to the potatoes, salt with the remaining salt, sprinkle with pepper, and keep on cooking on low heat with a lid for 30 minutes without mixing.
At this moment, take off the lid and let everything cook for another 10 minutes.
Serve warm as a side dish with vegan meatballs or vegan meatloaf.
Patate ‘mpacchiuse can be kept in the fridge for two days.
