Oriental rice with vegetables and tofu

Ingredients for two people

- 160 grams of rice (I used red rice)

- 250 grams of cooked green beans

- 200 grams of carrots (about 2)

- 125 grams of tofu

- 100 grams of onion (about 1)

- 2 tbsp of sunflower oil

- 3 tbsp of soy sauce

- A pinch of pepper

- 1 tsp of salt

- 1 tbsp of cornstarch

- 2 tbsp of olive oil

- 1 tbsp of sesame seeds

Preparation

First of all, prepare the tofu. Press it to eliminate all the liquids it contains, then dice it and place it in a bowl. Cover the tofu with soy sauce, sunflower oil, salt, and pepper and let it marinate for twenty minutes. Cook the rice and set it aside. In the meantime, cut the carrots and the onion and cook them in a pan with olive oil. When they are almost ready, add the green beans and the marinated tofu (and its marinade) to the pan. Add the cornstarch to the pan too, in order to thicken the mixture.
Serve the rice, vegetables, tofu, and decorate it with sesame seeds.

Oriental rice can be kept in the fridge for three days.
