Spelt piadina with hummus and vegetables

Piadina (Italian flatbread) is a quick and delicious recipe. It can be prepared in different variants, this time I suggest one with spelt flour.

Ingredients for four people

- For the piadine:

- 270 grams of spelt flour

- 115 grams of water

- 30 grams of olive oil

- 1 tsp of salt


- To fill them:

- Hummus

- 100 grams of onion (about 1)

- 200 grams of pepper (about 1)

- 100 grams of salad (about Ā¼)

- 1 tbsp of pumpkin seeds

- 1 tbsp of sesame seeds

- 1 tbsp of poppy seeds

Preparation

Combine in a bowl flour, water, olive oil, and salt. Let the dough rest for ten minutes. In the meantime, cut the onion and the pepper and cook them in a pan. Roll out the dough and shape it into piadine. Cook them in a pan for two minutes on each side. Fill the piadina with hummus, cooked onion and pepper, salad, and pumpkin, sesame, and poppy seeds.

Spelt piadina can be kept in the fridge for two days.
