Vegan seadas

Seada is a dessert typical of Italy’s region Sardegna. It consists of dough which is filled with cheese and lemon peel, then it is fried and served with a sweetener.

Ingredients for eight seadas

- 200 grams of wheat flour

- 50 grams of semolina flour

- 40 grams of margarine

- 120 grams of water

- 1 lemon (for its peel)

- 100 grams of plant-based cheese

- 8 tsp of maple or agave syrup

- 350 milliliters of peanut oil

Preparation

In a bowl pour wheat flour, semolina flour, margarine, and water. Mix well and knead the dough until it is homogeneous and smooth. Use a nebulizer full of water in order to not let the dough attach to your hands.
Wrap the dough with cling film and let it rest in the fridge for 45 minutes.
In the meantime, grate the plant-based cheese and the lemon. Combine the cheese and the lemon peel in a bowl and set aside.
Cut off a little piece of dough and roll it out on the work surface. Cut the dough using a round cookie cutter. Repeat the same procedure until you obtain 16 round pieces of dough.
Fill half of the pieces with a full tablespoon of the mixture of grated cheese and lemon zest.

Place the second piece of dough on the first one and seal the edges applying pressure with the tines of a fork.
Heat the oil and fry the seadas until browned. Dry them with absorbent paper.
Serve the seadas while they are hot and crispy, decorating them with maple syrup and lemon peel.

Seadas can be kept in the fridge for two days but I suggest eating them right after preparing them.
